spacer40 Best Recipe Contest for April's recipe contest is: Favorite Squash

Squash is a fruit because it grows from a flower and has seeds, even though we often think of it as a vegetable and it is usually treated like a vegetable because it tastes savory, not sweet. Squash contains many vitamins and minerals that contribute to nutrition. It helps to reduce cholesterol levels and prevent heart problems. It improves blood pressure and reduces inflammation. Squash also has high quantities of fiber which assist digestion.


There are so many different varieties of Squash, lets see your favorite recipe by using one of your choice!

3 Eggs, beaten
1 C. Vegetable Oil
2 C. Sugar
2 tsp. Vanilla
2 C. Flour
3 tsp. Cinnamon
2 tsp. Baking Soda
1 tsp. Salt
½ tsp. Baking Powder
2 C. Zucchini, coarsely ground

Combine eggs, oil, sugar and vanilla. Mix well. Combine dry ingredients and add to oil mixture, mixing well. Stir in grated zucchini. Pour batter into greased and floured 10” Bundt pan, you can also use a 9X13, just adjust your time. Bake at 350 for 55 – 60 minutes if using the Bundt pan. Allow to cool for 20 minutes before removing from pan. Really good by itself, or with a cream cheese icing.

No mixer needed, just a whisk. I have also used a 9 X 13 pan and lessened the time. This is really tasty; lots of cinnamon flavor.
