Posted by Mignon on 18 Feb 2024 at 6:57AM My mother made this inexpensive dessert when we were growing up and struggling to make ends meet. She called it the "Poor Man's Parfait". Ingredients: 2 - boxes of Raspberry Jello 1 - 16 oz. can of crushed pineapple (drained) 1 - 16 oz. carton of heavy whipping cream Prepare jello as directed and allow to set. When jello has set, stir jello well with large spoon. Add the drained crushed pineapple. In a separate bowl beat the heavy whipping cream. When fully whipped, combine whipped cream, jello and crushed pineapple mixture in a large bowl. Mix well and chill before serving in sundae glasses. This looks messy but tastes divine! The REAL whipped cream is why this tastes SO GOOD!
